Iiiiiittttt'sssss MONDAY!!!

It's the first Monday of the school year. Wisconsin actually has a law that school cannot start before September 1st (unless your district is granted a waiver, and they're hard to get), so we started on a Thursday and then last week was of course Labor Day. So here we are. Let's hope the kids got some rest this weekend (although I doubt it since we had beautiful summer-like weather and everywhere I went, I saw kids running around outside, including my own!).

And, well, teachers need their rest, too. So that's all I got for you (because I was busy this weekend, too). Well, here, have a recipe, um, make that two (we made both last night and they were very good!). (although we used freshwater salmon - my sister from Alaska tells me you don't need the oil for ocean salmon) Oh, and I finished reading Anna and the French Kiss today. What are you reading?

Grilled Salmon
Recipe I: Rinse fish and sprinkle on some salt and pepper. There is a muddy, fatty part underneath the skin side you should cut out with a fillet knife (it tastes like dirt if you eat it). Mix together the juice from at least 1 lemon and a couple tablespoons of olive (or canola) oil. Add dill (fresh is best, but dried will work, too) and a chopped up onion. add fish and let marinade for at least 2 hours. Pour into a foil packet and grill over moderate to high heat for 10 minutes per side. fyi: I always marinade in a ziploc bag and then just toss the bag when I'm done for easy cleanup!

Recipe II: (start same as above, also sprinkle with garlic powder). Mix lemon juice, 1/3 cup of soy sauce, 1/3 cup brown sugar, 1/3 cup water, and 1/4 cup olive (or canola) oil. Proceed as above. (the original recipe I had said to broil it right on top of the grill, but I like it better with the marinade in the foil pack. Yum!)

  1. Yum! That sounds delicious. School around here started September 5th (and it still felt too early:)

  2. My mom tells me they implemented a similar law in Michigan last year. Here in CO, the kids started back at the end of August. When I homeschooled, sometimes we went year-round - depending on her needs and drive. And now she's in college. Yay.

The salmon sounds yummy. Heh, I always use a baggie for marinating, too. It's so much easier. =o)

  3. It's our first Monday, too, because we always start after Labor Day. We had a very busy weekend with lots of playing for the kids.

    I love salmon!

I'm reading Nova Ren Suma's Imaginary Girls. Very lyrical. I loved Anna and the French Kiss (but then again, what's not to love about Paris?).

  4. We had that in Illinois with my son's schools, too. I always thought it was such a waste to have a day or two of school followed by a long weekend. But here you are back in the thick of things!

Christy, I'm afraid Mr. Random.org didn't pull your name out for our para critique feature this week. Dang! But if it helps at all, I like your paragraph a lot. I think it sets the tone well, it's active, and it sets up the relationship btwn. the mother and daughter well. People often say not to start a chapter with dialogue. It's tricky because the reader doesn't feel as grounded, but it can work. If you are concerned about that at all, I think you could simply reverse the order of your first two sentences so the reader knows we're in the car with mom, then sees the action.

I wish school started in Sep-- it was only 112 on the first day of school here in Las Vegas.

  8. Nice recipe :) And I totally understand the busy factor and how we teachers need our rest. The school year started for us here in VA last week (after Labor Day) and I've been dragging ever since.

I LOVED Anna and the French Kiss. Pam read it and raved, so I felt like I HAD to read it--and OMIGOD she was so right! I'm reading Victoria Schwab's The Near Witch right now. She has a very beautiful writing style.

  9. Omg, I eat grilled salmon once a week when my hubs grills out. I love it with just lemon juice- I go a little nuts with the fresh lemon and just squeeze it on every bite as I eat it. YUM. I'm going to be SO sad when it gets cold...but I'm still determined to make my hubs grill it so he'd better get his gloves and hat ready!

I still need to read Anna and the French Kiss- glad you liked it!
